Hi everyone! So as I promised on Instagram, I have an amazing recipe here for you. Today’s recipe is of the bright, tropical Mini Guava Cheesecake!

Inspiration

So while I have always been fully aware of the flavor of guava, considering I grew up in a Samoan family, Rodney was not aware. So remember when I had my cross country road trip last fall? Well during that road trip, I made it my mission to taste and experience the foodie culture for each state that I was in. (Read about my trip here) So of course, while we were in New Mexico, it was important that I had some yummy Mexican food. Not only did I discover my major love for enchiladas while in New Mexico, but Rodney found his love for guava!biscochito

After our authentic Mexican dinner, I made Rodney drive to probably 3 different bakeries, in the search for the famous biscochito. After plenty of searching, we finally found a bakery that was still open and selling not only biscochitos, but also a little bit of everything else. So I decided to pick out an empanada as well, and of course I went for the guava empanada to try to enjoy the experience as best as possible. Let me tell you, all I had was one bite, once I let Rodney try some, he ate the whole thing! Ever since then, Rodney is a fan of guava, and the rest is history.

So below is a fun, easy recipe. These cheesecakes feature macadamia nut and guava for a bright, tropical twist. Mini Guava Cheesecake
Guava and macadamia nut offers a bright, tropical twist packed into a perfectly mini guava cheesecake.

Crust
  1. Preheat oven to 325 degrees F. Line a cupcake pan with paper liners.
  2. For the crust, combine all ingredients until all graham cracker crumbs are moist. Spoon about a tablespoon of crust mixture into each liner. Press crumb mixture into liner to create a smooth crust, going up the liner.
Cheesecake filling
  1. In a medium bowl, beat the cream cheese and sugar until smooth. Add the remaining ingredients and mix on low until combined.
Guava topping
  1. In a microwave safe bowl, warm the guava paste until melted. Heat the guava paste in small increments, stirring in between, to prevent burning. Add lemon juice and stir to thin out the guava paste.
Put together
  1. Fill each liner about 2/3 of the way full with cheesecake filling. Add about 1/2 teaspoon of guava paste mixture on top and spread a nice top layer. Bake for about 15-18 minutes, or until just set. Let cool. Then let the cheesecakes chill thoroughly before serving. Enjoy!
