Hey folks! Has everyone been enjoying spring so far? I know I have, despite the tedious school responsibilities and never ending Seattle rain. Well I come today with a simple and easy carrot cake recipe. Most of the recipes that I present to ya’ll are recipes that I have only tried a couple times and found to be interesting or good enough to provide to ya’ll. With this recipe, I intended to do the same thing, Then I realized that this recipe is going to have to be my staple carrot cake recipe. It is such a minimalist and easy recipe that comes out amazing every time.
I personally have never been interested in carrot cake until it is Easter weekend and I want to make something themed. Carrot cake is one of the acquired tastes. Especially considering there is so many ways you can make carrot cake. Raisins, walnuts, pineapple, pecans…the list is endless! Because I am not the most intrigued by carrot cake, I decided to go for an easy carrot cake recipe that has minimal ingredients. On top of it being a more minimal cake, I also geared the cake towards a banana bread feel. I initially thought it would be fun to do a carrot cake cheesecake cake, so wanted the cake to be more dense. Although I scratched the cheesecake layer, I still wanted a dense, moist crumble on my cake layers.
Although Easter has come and gone, this is such a simple and easy carrot cake recipe that you can easily enjoy anytime of the year. If you have it in the fall / winter, try infusing some chai tea into your cake batter for a heavier dose of warm spices. Learn how to do so here!
